The origins of Gaby’s all starts with the properieter’s parents Gabrielle Maes, or “Gaby” as she was known, and her husband Ireen Maes. Originally from Flanders Belgium they moved to Ireland in 1966 to manage a fish farm in the town of Dingle. In 1974 Gaby then started up a Delicatessen in Dingle, which they later moved to Killarney in 1976 to a premises at 17 High Street. Over the following years they then expanded the business to include a small restaurant at the rear of the premises. The business was then taken over in 1988 by her son Gert (the resident chef) and his wife Marie (who looked after Front of House). In 1992, the business was again expanded and moved into a new purpose built, larger premises at 27 High Street; where we are to this day.
