Isidora Restaurant inspired by the local Ariqueño product, combining Chilean and Peruvian techniques to create a cuisine with a regional identity from forgotten and little-consumed products. We began to create a concept of regional signature cuisine, shaping experience and youth, we began an adventure, mixing LLuteños corn with yellow peppers, artisan cheeses from Bethlehem to gratinate octopus, shrimp and oysters, Azapa olives, merging our culture with ancient cultures, those corn colors that give a touch of decoration but that can actually be cooked in thousands of ways and there the detail to start our local cuisine. We offer an experience since our main guest comes into contact with our house, a good meal goes hand in hand with good service and a good cocktail to taste. We are committed that to make ourselves known we have to play the role of team and there the beginning of a concept of regional cuisine from the professional to the traditional. We started from a great dream and today we are a reality, but we are aware that the road is long and there is much to do.
