At Niva we like meat, and most of all meat from Swedish farms. Most of the raw materials we work with come from farms in the immediate area. The meat that we ourselves hang in our mortar fridge is hand picked and selected after marbling by the master at the slaughterhouse in Kalmar. Our hamburgers are ground on the right and bring from Swedish cows before being grilled in our charcoal grill which we light up an hour before opening each day. Good meat requires the best possible cooking technique and in our opinion there is almost nothing better than a really good piece of meat grilled over a really hot charcoal bed.
