In the beginning Vedish Purdassee, chef from the exotic island of Mauritius is the one that laid the basis of the menu of the Christina Restaurant and instructed the next generation of chefs that continued his style. Vedish said that “fusion means to play with a multitude of flavours until you find a new fabulous one”. For this reason, in Christina’s kitchen you will find ingredients and receipts from Italy, France, Romania, China, Thailand, India, Lebanon, Pakistan, Vietnam, that combine in a mix without any other rule except the one of an incredible taste, a taste that is not present from the first bite, but one that develops, amplifies and diversifies. “People get to know other cultures, other traditions and religions just by the simple gesture of getting together at the same table” – this is the opinion of Vedish (in whose family there are Indians, Africans and creoles). Cooking from the age of 14 out of passion, Vedish was part of the teams that made up the staff of some of the best well known restaurants in Mauritius (among those La Maree, the restaurant of Hotel Maritim – named the best restaurant in 2002-2003), as well as part of Princess Cruise Lines’ team.
