The idea of paying tribute to the Puna and Altos Andes ecoregion comes from our passion for the people who inhabit the most barren and harsh regions of our territory. The presence of the llama (lama glama) as an indigenous animal and the presence of amaranth and quinoa encouraged us to merge a dish that today is among the restaurant's classics.
