The Laurent is a veritable institution in Paris. The building started life as a hunting lodge, then became a dance hall during the Revolution, and was restored in 1842 by the German-born architect Jacques-Ignace Hittorff, commissioned at that time by King Louis Philippe to plan the Champs-Elysées. The name of the premises came from its third owner who, in 1860, gave his first name to the famous restaurant.
