Coming up with the concept of “Wai Me!” - the first network of democratic Georgian eateries in Moscow - we (Khatuna Kolbaya and Tengiz Andribava) wanted to dispel the myth that Georgian cuisine is necessarily a wine horn, a multi-day feast and long toasts. We have the correct Georgian food quickly prepared and gets on with the format fast casual! We have self-service, pagers report the readiness of the order. Guests do not spend their time waiting for food at the cash register, but may find a convenient place for themselves and calmly go about their business while they are preparing and collecting an order.
