Kaloria, a limited liability company, is one of the largest processing enterprises in the south of Russia, occupying a leading position in terms of production in the region and having a turnover of over 2 billion a year. The company does not stand still, constantly updating technology and production. So, in 2015 a workshop with blue mold appeared, and in 2016 a workshop for the production of cheese with white mold, which allowed to increase the production of cheeses with moldy crops to 140 tons per month of output. Kaloria is an enterprise, one of the first in 2003 to revive the traditions of the production of blue cheese in Russia, the first to produce cheese with different types of molds - white and blue at the same enterprise.
