Having sampled all the major beef breeds available in Ireland, we settled on Black Aberdeen Angus supplied by FX Buckley. The patty is minced fresh every morning - a precise ratio of three different forequarter cuts. We add only salt and pepper seconds before grilling. After extensive testing, we have perfected the classic American hamburger bun (Amish dinner roll). Our excellent Baker Derek produces them daily, to our spec, in his bakery in Tallaght. Lettuce, onion, tomatoes - we have established links with suppliers for fresh, quality vegetables. In particular, excellent quality tomatoes out of season.
