Between 1990 and 1995, chef Alice Yumi Shibata Yamanishi worked in Japan as a cooking teacher at a bridal prep school. Upon returning to Brazil, he worked at the Japanese embassy, where he began to develop recipes that he learned during his time abroad. From 2005 to 2010, he took over the Kosui restaurant - elected the best Japanese restaurant by Veja Comer & Beber 2010/2011.
