The Turkish cuisine is diverse and has been influenced by Mediterranean and Middle Eastern cuisines. Like other Mediterranean cuisines, food is cooked with olive oil, herbs and spices. Healthy vegetables are used extensively and the meat is stewed long and hard in the oven so that the taste of spices, herbs and food can be fulfilled. Red chilli is a national spice in Turkey and is used in many forms in many forms. Turkish hospitality loves cooking and enjoying it with friends. Time is spent cooking and the food is done with heart. This is the principle that we also want to follow in Hagia Sophia; we only use fresh ingredients and make everything by hand from lavash bread. We serve traditional, fresh and unobtrusive Turkish a la carte food, to which at least we are particularly fond. In addition to carefully selected meals, our list is complemented by Turkish red and white wines as well as authentic Turkish sparkling wine and Ephes beer, which is familiar to many.
