What makes our sushi unique is more than just fantastic and fresh ingredients. With us, execution is crucial and we place great care in the preparation that is based on traditional processes that are designed to produce the best out of all our raw materials. The fish and seafood are often seen as the star of every sushi dish, but without the perfect rice, it loses all its luster. At KINJO, we use a Japanese short-grain specialty rice that we carefully wash several times before steaming. Then we mix the rice with our own vinegar mix, for a rice with kernel, where each grain of rice can be separated but at the same time stick together. We also manufacture the majority of our sauces and broths in place to get just the right taste, because we are absolutely convinced that the complements are just as important as the main ingredients for creating that special taste experience that we want to deliver at KINJO.
