Ajitama is not a restaurant, but a Supper Club where we open the door to people interested in trying our Ramen 100% craft. All elements of Ramen Ajitama are made entirely in our kitchen: the meat is cooked slowly during the night, the fresh pasta is prepared during the day and the broths are cooked gradually with the utmost rigor.
