The first Escalon restaurant was started in 1998 right next to the Floybanen in the center of Bergen. The name Escalon comes from the fact that the chain's founder, Trond Kjellevold, frequently frequented a flamenco bar in Malaga in the 80s called "Escalon". When he was a pioneer of tapas in Norway several years later, there was no doubt what the name of the restaurant should be.
