Edirne Tava Ciğeri, liver obtained from “veal” bovine animals grown in Edirne region, is a local food produced by using wheat flour and sunflower oil belonging to the region. By way special dried fried red peppers are used. The liver obtained from at least one year old calf grown in Edirne region is carefully cut from the membranes, nerves and veins with the finest consistency during cutting and chopping and is cut into leaves and purified from blood. Edirne Pan Gras is cooked in a pan, but the pan is made of aluminum and special. The feature of the ceiling is that it is about 1 mm thin so that the oil can heat up very quickly. The most important side dish in service is Edirne / Karaağaç crop dried red peppers. We offer the real taste of Edirne Pan Liver to our esteemed guests in our workplace.
