We prepare our doughs gently, using only natural ingredients and time-honoured traditional methods to build flavour and texture without damaging the delicate structure of the dough. The breads are then baked in our custom-made “wood-fired” oven, which bestows the unique aroma and wonderfully textured crust that only traditionally baked breads can offer, with a few exceptions that derive greater benefit by being baked on stones in our “John Willet” oven.
