American-Chinese takeout in Singapore? You gotta be kidding, right? Well, Chopsuey Café certainly isn’t. Quite possibly the pioneer in whipping up freshly spun interpretations of the chow mein you see in sitcoms, this PS.Café-owned joint isn’t shy about its influences. Go for the crispy duck bao ($17): soft white buns filled with shredded duck confit and pulled roasted duck, served with a sweet bean sauce. Then fill up on General Tso’s chicken ($21), which is a far cry from the gloopy kind you’ll find overseas. Chicken drumlets are coated in black and white sesame seeds, then fried in a Mongolian sweet red vinegar sauce. Even its mee sua ($14) steps out of the comfort zone: the noodles are fried with veggies and crowned by slabs of rare rib-eye.
