Biella. Here we feature our house-made cured meats that we artisanally craft at Salumeria Biellese. All of our pork products come from 100% all-natural Berkshire. Our beef is grass fed and locally sourced, and our chicken is all-natural from local Amish farms. Our vegetables are seasonal and brought to us from some great farms in the garden state of New Jersey. All of the bread we serve is from Sullivan St. Bakery, only a couple of blocks away. We source these ingredients because we believe that they are the most reflective of our familys convivial traditions.
