At the end of the 80s Mariangela Bellei, the last female member of the family, transformed the limited family production into a thriving, internationally structured business reality, always respecting the deep traditions of her land. The Acetaia Bellei belongs to the Consortium of Balsamic Vinegar of Modena. All our Balsamic Vinegars are made from cooked grape musts. The Bellei family has cultivated for centuries its love for tradition and handed down, from generation to generation, the passion and art as a cultural heritage, in the production of Balsamic Vinegar of Modena PGI up to the present day. The heart of the vinegar factory is represented by over 3,000 barrels of oak with a capacity ranging from 220 Lt to 15 Lt. The reduced size of the barrels ensures a very wide contact between the vinegar and the wood, allowing the balsamic vinegar to enrich itself with aromas and flavors complexes.
