MINDSET “Ecuador is the country with most biodiversity per square kilometer of the world, it has an enormous flora and fauna thanks to the geography divided in four regions: Coast, Andes, Amazon and Galápagos Islands. The cultural diversity helps us to recreate traditional preparations and products from our gastronomy. The ´´Raymis´´ are tributes to nature and the astral cycles, the construct of indigenous cosmovision in Andean communities, they define the agricultural calendar and indicate the products that are obtained from each season. The harvest, sowing, fertility and flowering mark the sense of celebration of each Raymi.”
