Our motto is: food of the day, for the day and for the day. Contemporary Mexican gastronomy is the product of a long and rich evolution, where European-Hispanic products and techniques are added to pre-Columbian recipes. This time we are not betting on avant-garde or fusion food, nor do we modify the authentic flavor of the dishes. Aware that human capital is essential in these challenges, we have opted for great native professionals, specialists in various facets. Thus we have the Mexican Miguel Angel, poet, self-taught and humanist, Andres del Collado, who is in charge of the exquisite decoration of the premises. In the kitchen we have authentic gastronomic alchemists such as Eric Daniel and Luis Angel, among other depositaries of the ancient techniques and recipes of the Toltec country. We know that the kitchen is the heart of our bet, its soul is the authentic mezcal, our life is the customers.
