Cambodian chef Ly Leap set out to reproduce the atmosphere and feel of a Vietnamese village, and the result is wild: a thousand square metres of jungle, where the tables are tiny islands suspended above water, with fish in and everything. It looks amazing, but is the food worth it? Definitely. This is a frenzy of Asia-inspired tapas, in which Ly Leap shows off his expertise with spices, citrus and aromatic herbs. You'll practically swoon over dishes like the steamed rose of the desert dim sum filled with meat, prawns and herbs and served with sweet soy sauce.
