At the beginning of the 19th century, the current Bryghuset No5 was only part of a garden belonging to the Amtskrivergaarden. Through the garden ran the creek, which has given its name to the town of Holbæk. To this day, the creek still flows under the building and opens into Holbæk harbor. The trees that once stood in Amtskrivergarden's garden still have their roots in the current courtyard. The tree that stands out most immediately is the tree called Mispel. Its fruits have, almost by chance, proved to be excellent for beer brewing. The house's own history started in 1860, as a clothing store called "Jyske Strikkerier's Sale", as one of the first and arguably best manufacturing stores in the city. The clothing store remained in the house until 1947, when Andelsbanken and lawyer Ladager took over the building. Around the beginning of the 1980s, the old buildings began to be evacuated. to this day is Bysø parking lot. This was done to create access options so that the upcoming Nygade on the front of the house could be transformed into pedestrian zone. Henrik Sylvest took over the entire Nygade 5 in the 1990s. He remodeled it into Disco Harlekin and the The Crown Pub. In early 1999, Thomas Jakobsen took over The Crown Pub and transformed it into a two-story restaurant. The restaurant was named Cafe Nygade No5, and was a brand new, modern and alternative concept at the time. The microbrewery came to the world in August 2005 with Elisabeth Gotschalck as brewmaster. The brewery was established in the basement and with a herb kettle standing in the restaurant that still stands there to this day and is still in use. The brewery was named Holbæk Bryghus, and the restaurant changed its name from Cafe Nygade No5's to Bryghuset No5 at the same time.
