Το λιμάνι ήταν γεμάτο ψαρόβαρκες και τα περισσότερα κτίρια αποθήκες. Πολλά πράγματα έχουν αλλάξει στο πέρασμα μισού αιώνα. Υπάρχουν όμως και κάποια που πάντα μένουν ίδια. Η ποιότητα των πρώτων υλών παραμένει εξαιρετική. Το εστιατόριο «Ζέπος» λειτούργησε πρώτη φορά ως ψαροταβέρνα το 1961, όταν τα Χανιά δεν ήταν ακόμα τουριστικός προορισμός. Το λιμάνι ήταν γεμάτο ψαρόβαρκες και τα περισσότερα κτίρια αποθήκες. Το… μενού της εποχής εκείνης ήταν ό,τι έβγαζε το δίχτυ του ψαρά και οι πελάτες, οι εργάτες της περιοχής που στο διάλλειμα τους ήθελαν μία ρακί και ένα μεζεδάκι. Το 1976 όταν πήρε το «Ζέπο» η οικογένεια Παρασκευάκη, στο ενετικό λιμάνι υπήρχαν όλα κι όλα 4-5 ταβερνάκια. Οι νέοι ιδιοκτήτες έδωσαν μεγάλη σημασία στην ποιότητα των πρώτων υλών. Τα ψάρια ήταν πάντα «ημέρας» και τα λαχανικά ντόπια και φρέσκα. Εμπλούτισαν το μενού του εστιατορίου με μαγειρευτά φαγητά της κρητικής κουζίνας. Μέσα σε δύο χρόνια κατάφεραν ο «Ζέπος» να είναι ένα από τα πιο γνωστά και αξιόπιστα εστιατόρια στην πόλη με σταθερή ντόπια πελατεία. Από το «Ζέπο» πέρασαν μεγάλες προσωπικότητες της πολιτικής και πολιτιστικής ζωής της Ελλάδας όπως ο Μίκης Θεοδωράκης, ο Μάνος Κατράκης, η Αλίκη Βουγιουκλάκη και άλλοι.Την δεκαετία του ’80 το πελατολόγιο διευρύνεται. Στην πόλη ξεκινά και αναπτύσσεται ταχύτατα ο τουρισμός. Στις αρχές της δεκαετίας του ’90 αναλαμβάνει το εστιατόριο η επόμενη γενιά. Οι εγκαταστάσεις εκσυγχρονίζονται και το μενού διαφοροποιείται. Πολλά πράγματα έχουν αλλάξει στο πέρασμα μισού αιώνα. Υπάρχουν όμως και κάποια που πάντα μένουν ίδια. Η ποιότητα των πρώτων υλών παραμένει εξαιρετική. Το μενού έγινε πιο δημιουργικό και τολμηρό, παραμένει όμως ελληνοκεντρικό. Οι συνταγές της κρητικής κουζίνας γίνονται αυστηρά με τον παραδοσιακό τρόπο. Το φύλλο στις πίτες και τα καλιτσούνια ανοίγεται στο χέρι. Το λάδι μας, αγνό και παρθένο, προέρχεται από τα δικά μας κτήματα στις Βουκολιές. Και το χύμα κρασί παραγωγής μας που μπορείτε πάντα να δοκιμάζεται από τα βαρέλια στον εκθεσιακό χώρο του μαγαζιού δεν είναι μόνο ρωμέικο αλλά syrah και chardonnay. Οι πελάτες μας, πολλοί από τους οποίους είναι και φίλοι μας αφού έρχονται ξανά και ξανά τα τελευταία χρόνια, είναι πλέον από όλες τις χώρες της Ευρώπης.
